Jarrah trees can live up to 1,000 years and are very slow growing, taking 120 years to reach full maturity (to be able to produce their best honeys!). The individual trees only produce flowers for a few months every 4 years. Jarrah honey has high antibacterial and antimicrobial activity and due to its high hydrogen peroxide level, it can inhibit Golden Staph bacteria (which can cause a range of mild to severe infections).
