We do because it reduces your guesswork when converting to equivalent sugar amount.) Powder is pure (100% concentration). It’s easy to add too much sucralose because of its extreme sweetness. Liquid may allow better control because of its lower concentration. The dropper helps, too. Liquid is at 25% concentration (still a high concentration and needs diluting). Some sellers claim their sucralose liquids have higher concentration. Fact: sucralose’s solubility in water is about 26% at room temperature (we tested it at 27% this summer), beyond which it will dissolve no more. Our 25%-concentration liquid is near the upper limit, so any “higher” or “highest” concentration will add 2% at best.
