We have reproduced the characteristics of the Sekiden Japanese sword, which is "unbreakable, unbendable, and sharp", in our kitchen knives. ・The core material is made of ZA-18, a high-grade material containing cobalt (almost equivalent to VG-10), and both sides are reinforced with hard 420J2, overcoming the shortcomings of conventional three-layer steel, which tends to bend easily. ・This is a knife that has undergone the forging process (where steel is hammered hard to increase its hardness and toughness) and the hammering marks left over from the forging process. ・The sub zero treatment process is used to bring out high hardness and toughness by quenching followed by cooling to -70°C or lower. ・It is finished with a "Hamaguri blade", the blade edge shape of a Japanese sword.
