There is a long list of medicinal uses for the plant, that range from antibacterial, antibiotic, to sedative~ and the root can be dried and used as a coffee substitute, which is an excellent way of getting the nutritional and health/medicinal benefits of the plant. You can also use the tender leaves from Spring and Autumn as salad greens, or as a cooked green (blanched/boiled). The leaves have a very high nutritional value, similar to that of Dandelion; high is Vitamins A, K and C as well as important trace minerals. Also a member of the Daisy family, It has a similar look to a Dandelion plant when young, but then will send up a woody stalk which will branch out into many, and get tall and scraggly looking but will be covered with small powder blue to periwinkle colored blooms. It will bloom from early summer right up to frost. The Chicory plants attract bees and butterflies to your garden, and make great border plants. These seeds were collected from the wild plants that grow on the border of our garden. They are native, and fully organic. I do cultivate the chicory sometimes here, but we have so many wild plants that there really isn't much of a need to do so at this time. So I just get seeds off of the plants that I dig up to harvest the roots from. The plants will get anywhere from 2 to 5 feet in height, and I have even seen some get taller than that. They need at least 12 to 18" of space between plants because they will bush out quite a bit. They are perennial, but typically only live for a few years before dying off. The best time to harvest the roots is during the second or third year, in the fall. The roots can be dug up and placed in dark, in cool place like a root cellar or basement, and "forced", to get the solid white leaves or chicons, known as Belgian Endive which makes a delicious salad ingredient!
