Description: This listing is for Vintage Sabatier 15'' Chefs Hunting Knife Carbon Steel natural wenge wood handle German Profile Knife was made from the real Carbon steel Sabatier 15'' blank. (please see history bellow) . For the knife handle I used real wenge wood and old school brass rivets. It is full tang knife. Handle was covered by laquer for the protection. It is a nice heavy duty knife which could use on the kitchen and the same use like a hunting knife. RAZOR SHARP. RARE CUSTOM WORK. PLEASE SEE PICTURES FOR THE DETAILS. The blank which was used for the knife making was drop forged at a Four Star Elephant Sabatier factory in Thiers France from Carbon Steel. This piece is a real find. It was located in a warehouse owned by a gentleman who was one of the last major investors in the Sabatier factory, who told that they were forged at the turn of the century. Nobody knows exactly how truly old the blank is but I guess would be somewhere in the 20s to the 50s. The blade measures 10 X 2.25 inches and is not marked. This Blade is an unusually hefty 2/8th inch thick at the bolster. The overall length of this knife is 15.25 inches. Total weight is a whopping 14.25 oz - blank and around 20 oz knife with handle. Please note that just like the finished Sabatier Chef’s Knives of this period some of these blanks have slight bends The French refer to the misalignment issue as a “feature” of handmade knives and not a “defect”.
