Weigh the piece of meat and weigh out one ounce of the sweet cure for each pound of meat. 7. Rub the piece of meat on all side with the cure until used up. 8. Place the meat in a zip-lock bag and place in frig., turn each day for 5 days. 9. Pour out liquid, do not wash meat and place in smoker and smoke and cook to an internal temp of 145 and remove from smoker to cool. If you do not have a smoke you may use our powder hickory smoke and have mixed 1 teaspoon of smoke with each ounce of cure that you needed and rubbed with cure plus smoke.
