University of Wisconsin culinary student displays N.O. dessert --- Menomonie, Wisconsin -- So renowned is the reputation of New Orleans cuisine that an attempt to recapture the dining of the South in the 1880's became the subject of an elaborate research project at the University of Wisconsin-Stout. Students taking an advanced course in Haute Cuisine, or classical cookery, spent nearly four months and 3400 man hours researching recipes, locating rare ingredients and testing dishes for the dinner. The result, held recently on two separate nights, began with a 1969 sparkling wine from the Beaune Cote d'Oregion of France - Kriter Blanc de Blanc Brut de Brut - and proceeded through 12 courses, two intermissions, three complete table settings, and seven wines. --- Chef De Range Joseph Meyer, a sophomore from Cedar Rapids, Iowa, displays a platter of Crème Cornonets during the lavish feast.Photo measures 8 x 9.25inches.
