Eliza Leslie (1787-1858), frequently referred to as Miss Leslie, was an American author of popular cookbooks during the 19th century. She also wrote household management books, etiquette books, novels, short stories, and articles for magazines and newspapers. Eliza Leslie attended the cooking school of the famed Mrs. Goodfellow for two terms, and Seventy-Five Receipts in Cakes, Pastry and Sweetmeats was written based on notes she had taken of Goodfellow's class recipes, although in the introduction she insisted the recipes were" original, and have been used by the author and many of her friends with uniform success." All recipes are fairly clear and easy to follow, written before ingredients would appear first in a recipe and precede the instructions. There are chapters on sweetmeats, cakes, pastry, puddings, syllabubs, blancmange, ice cream, warm cakes, preserves, jellies, beef, lame, veal, pork, venison, rabbits, shell fish, fish, poultry, and game. The roasting recipes indicate a time period when roasting was done "before a clear fire." A reading copy. FORN-MSB-0124-0757-HK1077
